On the Swiss side National Cycle route 1 (Route du Rhone) follows the north shore of the lake. Some of the time it is on quiet roads through vineyards and the like but at others it has no choice but to follow quite busy roads especially around Montreux, Vevey and Lausanne.
Having said that I found that Swiss drivers appeared to be a lot more bike aware than the average UK driver and I felt quite comfortable on even the busier stretche

Unfortunately we were doing the Route du Rhone and did not venture on the French side so I can't say what you will find there.
