Single speed conversion

Okay, so my old skool, previously reliable, Saracen decided that it didn't like its rear mech any more, and spat it off in disgust.
So, being skint, I was thinking that a conversion to single speed would be my easiest (read: cheapest) option. Given that the mech is knackered, and it took out the mounting spigot on the frame as it went...
So. Easypeasy? New chain and quick link presumably? Can I leave the full cassette in place, or do I have to use a single sprocket on the rear?
And what about gearing? I've got 21 ratios to choose from if I keep the sprockets all on, what ratios do most singlespeeders run with?
