I need a new bike!

My regular rides consist of roads where I want to move at a reasonable rate, then going on to canal towpaths and tracks (but no mountains or quagmires). I would like a new bike with more gears. One suggestion has been I should look for a cyclocross bike (Specialized Tricross sport for example) whilst another is that only a touring bike would be suitable (such as a Dawes Galaxy or Hewitt Cheviot), but I don't need pannier racks.
I currently use an old Carlton Criterium which I inherited from a relative and which got me cycling again 3 years ago after a gap of 35 years or so!. I like riding it, have fitted some new parts (including wheels as spokes kept shearing off on the originals where bent a right angles at the hubs, no doubt due to metal fatigue), a more comfortable saddle and it seems to take all in its stride but I could do with lower gearing for some hills. Tyres are 27x 1.25 in.
I am concerned that the handlebar height is virtually unadjustable on modern bikes as I am 6ft 4in tall and currently have the bars raised quite a bit. The bike has a 23.5 in frame.
What would others ride in these circumstances or suggest?

Cross bike not a bad idea, I use one myself for road racing/training/commuting on. I guess some "mixed use" tyres, 700x28c, not too much tread would then give you the bike you need. I use Kinesis CrossLight frame.
