Bike weight -lighter bike vs heavy load

How much difference does it make?
Considering that I've got a cheap hybrid, which I think weighs 14.9kg. I've then added luggage rack (1.7kg) and baby seat (3.8kg). And then probably 1kg for my mini pump and (filled) water bottle.
So that's 21.4kg.
Oh, and the occupant of the baby seat weighs about 15kg.
Which gives me 36kg in total.
And then there's me at 90kgish, adding up to about 125kg.
Which all makes me wonder, given that the bike is barely 10% of the total combined weight including rider, and less than half of the weight of bike + load but excluding rider, how much difference a lighter bike would make?
And does losing 2kg of lard via a crash diet have the same effect as replacing all your components with ultra-light carbon fibre jobs?
