Stem + Bar Reach

I am doing a self build moving from a Specialized Allez to Roubaix.
The frame size is the same on both. On the Allez it has a 110mm stem with 70mm short reach bars.
Most bars seem to have around a 80mm reach. If I buy a 100mm stem will this balance out the distance or cause a different handling feeling?

Obviously the reach will be the same.
I can't imagine it will make the handling (on the same bike) any different.
Aren't the frames a different geometry?
