I've just bought an 8 speed chain for my bike thinking after all this time it was 8 and it's not. It's 9 speed and it jumps about. Is there a lot of difference?

yes there is. you need the correct chain. 8spd is too wide for a 9spd bike.

An 8 speed chain is likely thicker than a 9 speed, which can cause skipping problems as it can't sit on a sprocket properly without touching adjacent ones.
