8 speed Sora

I have Shimano 8 speed Sora gearing with two rings at the front. I was wondering if there would be occasions when this was not enough gears...or does it cover the full spectrum but just with fewer gear inbetween?

You are basically right, though it depends on your cassette you could have 11-32 in 8 speed or 12-23 in 10 speed, the former giving you a much wider range but also much bigger gaps between each. My 10-speed cassette is 12-27 which pretty much covers all eventualities when combined with compact chainrings.0

What size are the two rings?
Mine's a triple (28/38/48 IIRC) but I'm increasingly finding that I'm not needing to use the lowest-geared (smallest, right?) ring.
This be hilly Brizzle. Though I daresay I'd miss it when hitting a steep hill with a headwind and after a tiring leg of a journey anyway. I'll let you know as that's looking likely to happen on my way home tonight....!

What Blondie said is true but only applies to the cassette, not the chain rings.
I think it's generally true that a triple chainset is the same as (or similar to) a double, but for the addition of a smaller 'granny' ring.0 -
Though my triple/12-27 8 speed Giant may cover most gear inches combined, the gearing in any one ring is often frustrating.
The first three (big) cogs on the rear cassette are often too easy. Then the jump from 3rd to 4th cog/ring/whatever tends to be too big a jump and takes a while to get comfortable.
I think its something like 27-25-23-19-17-15-13-12. My triple is a 52/39/30 (or perhaps a 34 I forget).Food Chain number = 4

Tiz true that some 8 speed cassette jump wildly across the range so selection should be done carefully, I used an 11-30t MTB cassette with a very nice spread until you reach the silly BIG rings then the jump is large enough to actually be of some help, I removed this yesterday in favor of a slightly smaller campag range because it match the rest of the groupset.
