Will I need to shorten a new 105 chain to put it on my compact (50/36) 10 speed bike?

Depends on the size of your biggest rear cassette sprocket, but almost certainly yes. I use the big cog + big chainring method explained here:

This method is pretty simple and has always worked fine for me. Remember if you're using a powerlink or similar joining link you'll need to take this into account when working out the correct length.

105 chains need a new pin to replace the old one. If you re-use the old one, the chain will split.

New chains need shortening when fitting to almost any bike. The Shimano joining pin is single use only. Better to use a powerlink or similar.
