I'd suggest a Mercian track bike in white with red detailing and handbuilt wheels.

If we are going by which countries have him as a saint then we can pretty much use kit from any country.
If we are going by where he was supposedly born, then, well, we're stumped really as there aren't many bike manufacturers from Turkey.

Seeing as we are celebrating the Patron saint of England, I though it better to keep it English

According to many other places it was Nicomedia, which is now Izmit in Turkey...
