There is a post on the Singletrack site along similar lines! See http://www.singletrackworld.com/forum/topic/riding-in-south-east-anyone-rode-at-dear-leap-park. There is also one about Tilgate Forest / St. Leonards Forest which might be worth searching for.
Where in Sussex are you?
You really need to get to the Surrey Hills for anything technical as there is not much round here.
I've been to Deers Leap briefly & it is quite small. Unfortunately I didn't spend to long there as I was on a big loop but I wouldn't go out of my way to go there.Winter commuter: Planet X London Road

If you are near Tilgate then there is a lot there including a DH section.
I shouldn't really comment on Deers Leap as I only had a quick look round - I should have a proper look round there. It's only £2 & I feel it is important to support local causes.Winter commuter: Planet X London Road

Tilgate is very good, lots of old motorbike enduro tracks to follow, in fact there is going to be an enduro there in early June, so that will leave a 6-7 mile loop of tracks to enjoy afterwards.
If you fancy meeting up one weekend or evening I go out into Tilgate quite a lot
