If you're worried that much about the weight, why have a triple? Surely a compact would be the way to go! I use a Dura Ace 53/39 on my training bike (Madone) with 11/27 cassette but use Super Record compact (50/34) with 11/25 cassette on my Colnago race bike for going abroad (bigger ups to climb).

    Hope that helps.

FSA would also be a good choice.

Bugger all point in upgrading from Ultegra.

How much do you weigh ? The savings in weight wont be noticeable at all.

I think you're grasping at straws on this weight issue. Agree with "cougie" and his
    "won't be noticeable at all".

what they say. Go to the toilet before a ride and you'll prob. shift more weight that way or lose 1lb that week before you go on the ride.
