What Bike - recommendations please?

Hi everyone,
My works has just introduced the cycle2work scheme and I am think I am going to enlist on it - not just for commuting but for a bit of exercise on the weekend as well. So I don't think I am getting big into it at this point but I thought why not ask people who now about these things? - cause I haven't got a clue!
The bike will be used 99% of the time off road but nothing heavy - canal towpath (not concrete - it is a dirtpath), over grass etc.
The problems are:
(1) I must get a bike from Halfords or
Cycle Republic, Condor, On Your Bike or Pearsons (I am sure I read somewhere that Halfords can order in most bikes)
(2) I am 6ft 5in tall - what frame size do I need?
(3) Maximum bike price must be £500 - 600 (before 40% Cycle2Work reduction)
Want to take advantage of this scheme as it offers the bike at a 40% reduction and I can pay bit by bit.
