Spoilt for choice

Hi
I’m looking to buy a new bike (hardtail) but am kind of spoilt for choice.
I’ve got a budget of £3500. I’ve saved up over the past year by working a lot of overtime and I want to treat myself.
I’ve been looking at the Cannondale Taurine SL1 & 2, Orbea Alam Team and Cup and La Pierre Pro Race 700.
I really love the look of the Orbea but seem to be stuck for sizes. 17.5 inch would probably be too small and 20inch is too big. It seems to be quite short too. I haven’t really seen many reviews on it either. All you really can find out about it is some guy won the Olympics on it.
I really like the Taurine with the lefty and the large size would suit but hate the plasticky gloss finish.
I like the La Pierre and I can get it at a good price, but can’t find many reviews on it either.
I’m 6ft 1 and 11st 12lbs and consider myself to be quite a light rider. I’m going to be doing mainly Cross country on it. I’m not interested in racing.
Any help would be appreciated or any other bike suggestions too.
