No knowledge of routes but the terrain is hilly, nice scenery up on Golden Cap. Dig for some fossils on the beach along the coast to Lyme Regis.
I've added a signature to prove it is still possible.

i go there every year but not biking. There are really nice coastal footpaths but all have strictly no biking signs on them but give it a go if you want. Maybe mornings and evenings as you would get fewer walkers.

Basically though head up onto the cliffs, left or right and travel for miles. Other than that, I am sure there is some woodland around.

Unless however, you like road cycling or you could do it on an mtb, in which case they are loads of lovely quite roads through villages and along the coast. Too many places to name but Axminster, Beaminster, Burton Bradstock, Lyme Regis all worth a visit and achievable within a day. Great pubs too,
The Anchor at Seatown is a treat.
