Brakes with 'bite' ?

Although not to everyone's liking, I prefer my brakes to have loads of bite with a very firm lever feel and not much in the way of modulation - I'm either braking or I'm not
What brake set-up would you recommend to give me this on-off feel ?

Certainly not Shimano SLX or XT, both have tons of modulation and really vague bite points, just like I like :P0

I tried XT's and they appeared to have lots of modulation, while Hayes Stroker were very "wooden", but I guess thats what you want!0 -
