Totally a matter of taste, and depends on the bike too, so no simple answer I'm afraid. The thing to do if you're unsure is probably to hit ebay and buy some cheap bars to try out before blowing the budget on something you might not like. Or, if you've got any riding mates, chances are they'll have some random bars in the attic. I seem to accumulate bars  And they only take minutes to swap around.Uncompromising extremist0

I had fairly low rise bars on my Giant VT, only about 20mm or so. I took a gamble and went for a set of Sunline V2s with a 50mm rise (they are also about 50mm wider than the original ones too).
Best move I ever made - I feel more in control and less likely to dive over the bars, plus steering takes less effort because of the increased leverage.
Oddly enough, it's stopped the front end tending to want to rise on steep climbs...
However, as has been said, it's a matter of taste. What is right for me may not be right for you...0 -
I just replaced my very old, narrow and flat XC bars and I've liked the results both in terms of comfort and handling. I got some Planet X 2 inch riser bars from Chain Reaction - cost about £18. Seem very strong. Look OK.0
