Vintage road/path frame build 'appropriate' parts?

My shopping list needs filling for a 1950's road/path frame which I want to build up with reasonable quality parts but with function over form - I'm not bothered about a period build, but don't want anything that looks too out of place.
I was thinking just using basic Sys-Ex large flange double fixed hubs with 27 1/4" alloy rims but beyond that I'm not too sure.
Any recommendations for cranksets (preferably not cottered!), brakes/levers and wheel rims that are available off the shelf or fairly widely available second-hand?

I would use 26x1 3/8 rims as they are still easy available with a better selection of tyres. I agree with not needing period parts, it's not natural on a working bike, parts wear out over the decades and get replaced with improved versions.Bikes, saddles and stuff

Halfords do good 27" tyres and conti do a range, 27" would look better if the frame was designed to have 'em0

Indeed, but they may be used on an old road frame for the other half.... not decided yet!
I've had a good mooch through ebay and I think I'm happy getting a 70's/80's crankset with bolt on ring (but with a flat profile rather than the five arm modern tapered look), but I'm not sure on brakes that look OK and work well. Should I be looking at centre pulls?
I think the only period item will be stem as I just love the old school quill stems, hopefully I can find one in a 60 or 70mm in reasonable condition.0 -
IMO/E c'pulls certainly work better than any contemporary side pulls - especially with V-brake blocks. Weinmanns are perfectly good stoppers when set up right.d.j.

my holdsworth is a bit mix and match.
campag record, GB spearpoint, brooks saddle, maes bar, 27" mavic module E rims, panaracer pasela gumwall 27x1s. campag GS front brake.
