I need to replace the brake blocks or carteridges on my bike, is it just simply remove the block either fit a new one or if fitting carteridges remove the grub screw them slide out the carteridge also should I stick with shimano or try somthing a little different? are all the fittings standard for road bike caliper?

There are only two types - Shimano pattern or Campagnolo and most types are Shimano pattern. To replace, remove the grub screw and slide the old ones out - they make be gunked up so you might need to take the pad holders off and use a bit more force e.g. edge of a screwdriver blade or pliers. I usually clean up the pad holders with Scotchbrite and put some soapy water on the new pads to make them slide-in easily.
Make mine an Italian, with Campagnolo on the side..

KoolStop Salmon colored pads are cheaper and stop better than the OEM pads. They do wear out quicker but worth it IMO. When removing the old pads you can usually just take out the grub screws, lightly apply the brakes, and roll the wheel backwards. Unless the pads are glued in there they will usually just slide out when rotating the wheels.
