It's not "to try and ensure". That is often how the words are slurred to sound when spoken. The correct phrasing is "to try to ensure". You're not saying that it's more hassle than it's worth to try and [to] ensure everything is perfect; you're not trying and ensuring. You're trying to ensure everything's perfect.
