Converting to Single Speed

i am wanting to convert my old xc bike to a single speed and was wondering how easy it is to do and can any one recommend which chainsets to use in the conversion etc.
the bike i am converting is a kinesis maxlight xc, it currently has an LX chainset (BB) and deore cassette with clubroost hubs.
i am currently looking at using a DMR speed king kit but an unsure what to do about the chainset, do i buy a new one or just convert the one i have to single speed. which is best?
one final thing, what size tooth chainset and cassette cog to i go for?
i am wanting to convert to single speed i can use it as a training bike and just have a bit of fun on so i don't want it to be geared to harshly nor do i want to be spinning the pedals like a berk.
any information would be greatly appreciated.
