Single speed conversion

Hi everyone,
thinking of converting my old GT mtb into a singlespeed to use as a pub bike / not bothered where i lock it up kind of bike. Anyway, think I have figured out how to convert the rear hub (remove cassette rings, add spacers and ss sprocket etc) but what do you do with the chainset? I currently have a triple up front which came with the bike (thik it is an old sr suntour) on a square taper BB. Can I keep the cranks and fit a new SS specific front ring? If so can anyone point me in the right direction?
Any guidance is much appreciated, Cheers
