What sort of riding do you want to do? Fast XC, more relaxed days out on the trails, or gnarly terrain with drops and jumps?
Best spec might not give the best ride - best to shortlist a few and test them out.0 -

Mainly trail riding, some aggressive, but not jumps and drops.
Was looking at Trek 8000 series but would really welcome views on other makes also.

Will get a lot of bike for the money, especially a hardtail - may want to consider adding a suspension seatpost to make the ride more comfy. Plus remember can fit higher/shorter stems and bars if need be, and don't be afriad to ask the shop to swap so you can see what suits.
One option would be the Genesis 853:

Steel frame and travel adjustable fork should add comfort and help get the right position, but you may find the frame too long.0 -
