Shimano 105 LH Gear lever - double to triple?? Carbon query

Morning all,
my Felt (bought 2nd hand) has 105 (9 spd) throughout, and someone previously must have removed the smallest 30T cog, as it is just a double now, and runs on a fairly hefty 53/42, which is fine at present.
However, I will soon be swapping over the groupset with that on my Highway one (Carbon crankset and 105 10spd, which still has all three cogs.
I will then re-install the Felt kit onto the Marin.
The Marin is to be a tourer, and whilst I could get away with the 2 cogs on the Felt, I don't see it being possible on a potentially heavily laden touring bike going up some uber big hills.
So my question revolves around the current Felt left hand changer, ie it only moves far enough for 2 changes, so is it capable of shifting to an inner ring, or could somebody have disabled that feature?
I could of course take it to a bikeshop, having done everything else up until that point, but thought I would ask on here first, as all things considered, I would rather do it myself.
Also, while I'm here, I'll be refitting the carbon cranks, should I be buying a torque device of some kind to measure what pressure I am using to attach it?

from talking to people who know lots about this stuff, the shifter should be capable of being calibrated for a triple.
I have the other problem on my road bike. It has a double but is calibrated for a triple, meaning I have to shift once more than I need to sometimes to get the ring I want (invariably the smaller one!).
I haven't a clue how you'd go about it, but I reckon it can be done and also reckon theres no shame in going to a bike shop if needs must.

I will have a crack, when i take it on, probably before Christmas, and as I have a very friendly LBS (And I just bought a bike from them) I reckon if I can;t figure it out, and took the lever down there, they might give me some pointers, or worst case i can just give it to them, and a wodge of cash, and ask them to make it work
Your miscalibration sounds somewhat of a pain though :?
If I find out anything useful I will of course post it up here.
