Changing fork travel?

Just a general question. I'm looking at getting a hardtail with a 100mm travel fork. All I'm wandering is whether I could put a 120mm travel fork on the same bike. Obviously the frame is designed for a 100mm fork, and fitting a 120 would rise the front end up a bit but would it cause any problems??
I'm not seriously considering do this, just wondering IF it is ok and would work. What are the general rules regarding changing the fork travel?

If I get it it would be a Trek. Either 8000 or 8500. As I said I wouldn't be considering it seriously, but just wondered if it could be done. Warranty I'm sure would be voided, but it's a "what if" question.
EDIT. I also know that an 8500 isn't the sort of bike you would put 120mm of travel on.0 -
Does depend a lot on the bike, but nick is spot on. You will alter the handling - why not get a bike that was designed with the extra travel in mind?0
