Having a nightmare trying to service an ultra-torque chainset.

1- Any tips as to how to remove the bearings from the chainset?

2- And this is a seriously dumb question but bear with me... Should the bearing assembly on the none drive side be completely within the cup when fitted properly? IE should I only be able to see crankarm flush with cup when installed properly. I think the bearing assembly that fell to bits on the old set is stuck in the cup. How would one remove this?

You need a special bearing puller to remove the bearings - they are a press fit. Conventional pullers don't work because you simply can't get under the edge of the bearing. The bearings sit right inside the cups, there's only a small gap between the crank and the cup. The bearing is a sliding fit into the cup, so unless you've got the retainer clip in place, any remnants of the bearing should drop out.
Make mine an Italian, with Campagnolo on the side..
