Organised group riding and route info

Hi all! I am new to Bike Radar and relatively new to cycling. My employer, as part of it's anniversary celebrations, is planning an organised ride for employee's starting at it's most southerly office (City of London) and finishing at it's most northerly office (Norwich) and visiting 4 other office inbetween (Chingford area, Bishop's Stortford, Cambridge and Ely). I am part of the team helping to advise on this from a cyclists point of view and so am looking to you all for some help.
Firstly on routes. Are there any websites that I can find route planning info on, a bit like Google maps for cyclists? Ideally this would include roads and potentially cycle paths and other public rights of way?
And also, are there any rules or regulations that need to be adhered to (other than the highway code) when planning such an event? Do we need to get the police / highways agency etc. on side?
