I have a new back wheel, well new to me and it came with a 9 speed sram cassette, is it possible to fit a 7 speed shimano cassette on it instead?

yes but you will need to use a 7spd spacer to space it out correctly.

basically add a 4.8mm spacer ti the body before fitting the 7spd cassette.

many thanks, a 7 speed derailleur and shifter don't work too well with a 9 speed cassette.

the mech will but the shifter will not. get a new shifter and chain.
