Talk to me about trailiers

I am getting a new bike, mainly for commuting and the time for me to actually make some decisions and pop some cash on the counter is getting close!
I have decided to moderate from a pure commuter (eg Charge Mixer) to something a bit more practical, I am wavering around Condors Audax/touring and urban section.
I am wavering a lot, but think that maybe the bivio cross bike may suit (flat bars or not... Cannot quite decide!)
HOWEVER
I was wondering what the limits are for sensibly towing a trailer the cross bike has eyes for a rack, but what if I was to get a pure road race bike and tow with that? what are the problems that I may find?
Also I can see the advantage of cycling with a bob style single wheel trailer, but I can see that a two wheel job would be better for pulling around the shops as a shopping trolley, and i can see that as being easier than finding space to lock the bike and trailer outside.
SHORT VERSION
What should I look for in a bike/trailer combo, and how do you find the trailer experience?
Thanks
Aidan
