Quick question, do UST rims have to be used with UST tyres or can I use normal tyres with sealant or even normal tyres with tubes. (Mavic 819s)

You can use normal tyres/sealant or tyres and tubes.

With UST tyres, it's easy. With normal tyres and tubes, it's easy. With normal tyres and sealant it ranges from easy to "burn down the workshop and dance on the ashes" difficult.

i have the same rims as you and have run regular tyres (folding mountain kings) with sealant to make a tubeless set up but found it to be troublesome,

i have also run a stans conversion kit with regular tyres(hi rollers) which worked ok

the best so far has been ust rims with ust tyres, tis pricey and a bit limited though.

I've got mtn king tubeless now but the rear is pretty worn and, you're right, the choice of UST tyres is limited.

I use 2.35 LUST Ignitors. They're light and a decent general purpose tread although they don't stick like 42a Minions!. 2.35 LUST High Rollers are probably worth a look too.

I would agree with that, I'm finding my rear tyre is wearing quicker than I thought it would, I am waiting for them to look fully buggered and then will swap them possibly for a pair of paanaracer rampage 2.1 ust's as I had the non ust's before i went tubeless and they were good tyres.
