Race bike choices/setup

I am fortunate enough to have this dilemma. I will participate in my 1st race at 4th cat next month and wondering what bike to use.
Wheels aside do people use their Sunday best bikes or something middle of the road or a hack type bike?
I have a super bling Colnago E1 Sunday best which fits well but I don't want to get sweat on :-)
A decent carbon 928l for most purposes inc duathlons comfy but maybe too large at 62cm, I am 6'
And an old Cannondale Caad3 frame which fits well
Also do people race bikes generally small framed for good handling or large for stretch and comfort?
I am also confused about stem choice, why don't people use track stems to get them out of the wind a bit more?
P.S. I am not rich, I just like bikes....lots of them
