New Cassette on a new wheel

I'm planning on getting a new cassette to go on a new pair of wheels I am getting soon. I am currently using a 9speed shimano one and hence plan on getting a shimano compatible set of wheels. Are SRAM cassettes compatible with shimano? and which brand would people suggest?

    yes Sram have the same fitting as Shimano.

    Also is it worth having an 11 cog gear as the top one, or do people generally find that a 12 is more than enough?
