Yet another tyres question

I Have a chris bordman team MTB and the rear continental vapor is down to the last few MM of tread in the center, and the front is about 1/2 way through. I have a few questions.
1) can you mix and mach brands and tread patters? I come from a motorbike background and this is a big no no.
2) is there a minimum tred depth that you use as a guide as to when to fit the new tyers.
3) If i can mix and match tyres would i be ok to move over to

its for general XC riding that takes in Mud, rocks, sand, wet mud and sticky mud.
