How to adjust XT brake-levers?

I was content with my Shimano Deore XT v-brakes till a cable was replaced during a service. I know the cable needs to bed-in, but both brakes now seem much harder to pull. I'm sure I read somewhere that you can adjust the amount of force required, to suit one's taste (so to speak). If I remember aright, would some kind soul please spell-out what to do (or point me in the direction of one of those dinky 'how-to' video-clips on YouTube, perhaps)?
