Hi there.
Depends on whether you're going to do any events. If you are, then option 2 will enable you to train on the wheels that came with the £1100 bike and save the good wheels for race day - or just sunny days in the hills.
For £1100 you should be able to get a half decent frame equipped with 105 - or equivalent. You can then upgrades bits as they wear out.
