Am i right in thinking that I can simply replace my 8 speed Sora derailleur with a surplus 8 speed chorus one ?

Nope - mechs have different parallelograms which means you'll need the correct cable pull. (assuming you're talking about the rear - front mechs would be fine)

You need correct cassette, mech, and shifters for the rear end to work correctly unfortunately if you use STis or Ergos.
