Can I use a Sora triple transmission on a MTB commuter?

I've just purchased mostly Ultegra components to upgrade my Allez and was thinking about using the existing Sora transmission to build an MTB commuter.
I was thinking to keep an eye out on Ebay, Thegumtree or even for bikes dumped on the street for a frame and I already have some good hand built 26" wheels with 1" tyres and some 8 speed EZ thumb shifters.
I know most of the cheap or discarded bikes have rubbish frames, but occasionally people throw away bikes or sell them cheaply because the components are worn or don't work properly. A lot of these bikes have perfectly good frames.

Is this a good or crap idea? I know the gearing will be high, but I want a fast road hack that I can throw around and lock up anywhere.

    Sounds like a fun project. You might have to watch the front mech, because the band on clamp size will probably be different. C+ did a feature where they turned an old Dawes mtb into a nice cross bike for 200 pounds many moons ago.
