What difference do straight bars vs riser bars make to riding?

Something I've always wondered!

They provide a different riding position.

risers make you sit more upright, which shift more of your weight rearwards, making it easier to lift the front over obstacles, drops etc, and less likely to go over the bars if you hit a large bump at speed.
