Hi all. My first road bike (giant ocr3) should be getting delivered on wednesday. I'm wanting to order some spares before it arrives. What size and type of inner tubes do I want??

You can use whichever tube you prefer assuming you have a modern pump which doesn't care which type of valve it has. Presta is more normal on bikes. The tube size will depend on the wheel size however 700x25 would seem most likely therefore you are looking for an inner tube which has limits which are at least 700x25 such this (though not exclusively limited to:

You will notice that there are two that fit the bill:

    Presta 700x20-28 or
    Presta 48mm 700x20-28

The difference is in the 48mm in the second option. This means it has a 48mm stem on the valve. Some modern wheels have deeper sections and thus need a longer stem or you will have difficulty getting your pump to attach to the valve particularly if you have a track pump. Which is appropriate for you wheel I'm not sure however the longer stem will not cause any problems will just be a little ugly if it pokes way out from the rim because you have a standard narrow wheel section.
