every pedal stroke makes my gear cable lightly ping against the carbon frame making an annoying noise, why does this happen and how can I make it stop?!

Wear ear plugs.
And put frame protectors on the frame at the relavent points so it doesn't scratch.0 -
got some of those pace carbon designed protectors, save the frame but not my ears, plugs not an option as I will not hear traffic and worse case die.

If you mean the bare cable bouncing onto the tube, your LBS will have some rubber grommets that slide over the cable. Cheap and very effective.0

it is not the bare cable, the cable in the housing comes out of the shifters, and into the mounts on the frame: just before they come into the mounts they sit very close to the frame and it is here that they move ever so slightly and... PING!the day I stop dreaming of upgrades is the day die!

Then they are probably a bit long. Cut them down a bit.
If not then stick a bit of old inner tube round it. Improvise.0 -
You can get these foam tubes that slide over gear & brake housing. That should do the trick.0
