Looking at upgrading my Mavic Open Sports. I've been looking at various manufacturers offerings but can't make a decision.

I've got up to about £500 to spend. I'm 6ft4, 89kg, and the wheels are for my Specialized Roubaix used for longer rides and sportives.

Any advice/recommendations are appreciated.

Same weight and almost as tall as you and I have two bikes with Kysrium ES(now called Sls) wheels and they have been bombproof and use them for the same reasons as above and also for training. Alternatively what about Campag Shamals or Euros and Fulcrum 1s.

All will be perfect for what you have in mind.

I agree with Fathead. I have just got a pair of Dura Ace hubs on Open Pro rims form my brother. Tehy are superb; freewheel like a dream. I bought some Eastons recently; wished I hadn't bothered as these are far superior.
