Brake pads and Tyres

Hi all,
Could you please give me some advice on brake pads for V-brakes and tyres?
I'm currently using Deore V-brakes with Shimano pads and I think the pads are "pony", do you have any suggestions please?
Also I'm after a good off road tyre. I mostly ride XC trails and ride in both wet and dry conditions although I probably wouldn't go out if I knew it was heavy thick mud!
