Considering this hardtail to do the Camino de Santiago

BeOne Team Replica 26 Hardtail Bike 2007 from CRC. Reduced 33% to £400 and to me looks like a good bike for the price - Deore gears with a Lx rear, hydraulic disc brakes, Rockshox Dart3 with lockout which I imagine I would want for climbing. (Note it's my first MTB so I am no expert.)
I've done the Camino before on a touring bike, around 25% on the trail, and so I'm looking for something a little suited to the light off-road trail it requires.
Any comments or any other suggestions around this price? I'm 6ft and ride 58cm in a road bike (Trek) - any ideas with sizing? 19" or 20.5"?
Are these wheels likely to be reliable? I have paired spoke Bontragers on a Trek road bike and they are bulletproof, survived a head on crash which totalled a carbon frame and didn't need truing after.
Would be planning on sticking on a rack and light panniers, prob keeping it under 5kg. Looks like there are rackmounts, have emailed to confirm.
