Which stem and bars

Am in the process of upgradeing my gt agressor 3, well actually changing it all bar the frame
upgrading to a 9 speed with all deore xt parts apart from the crank which is deore hollowtech. even getting custom built wheels mavic rims and deore hubs
however not sure which is the best bar to get, would it be as simple as getting an oversized stem and bar and fitting them?? which would people reccomend, budget not great as spent quite a bit so far, i only use for commuting and going on rides down canal or road town

dont use towpaths, but the roads lol
just wanted a bit of better set up, just treating myself really
wanted to get the stem and bar for between £40 and £80 or there abouts, prefably near the lower end.
and will i be able to just put the new stem on frame if its a 31.8 stem and bar, as not sure what size frame is where the stem goes0 -
I managed to get Raceface Deus bars with matching 31.8 stem,togetherfor £60.Really nice rise,and pretty light too.
Check to see if Chain reaction or wiggle still have them on offer.
