Spitting on a human is assault but spitting on an object (like, for instance, a car) is not.
When it comes to property there is no such crime as assault. There is criminal damage but in order to qualify for that the damage must be permanent. So for example, if you write on a wall with a permanent marker pen then that is criminal damage (no such crime as graffiti) but if you write on the same wall with chalk then that is not because chalk washes straight off.
When damage is not permanent you might be asked to clean it up or pay the costs for someone else to clean it up but that's about it in terms of damage/assault.
Of course if you did it a few times then that would be potentially be harassment and I guess a creative copper might be able to argue that you'd impeded the motorist's ability to drive safely somehow but assault... No.
This is all assuming the copper's could even be bothered to get out of their car, of course. Chances are they'll just put the 'late for dinner' siren on and go home.0
