Questions regarding new build

Alright

first post so apologies if doesnt make sense lol

I currently have a GT aggressor 3 and i really like the frame but not a great deal else so have got the parts to upgrade it to a 27 speed all shimano deore xt components apart from the crankset which is just deore

I have some lovely disc brakes off a giant bike to add aswell

two mavic rim wheels due to be built this week with slicker road tyres as i only commute and deore hubs

now my questions are, i wanted to change the headset and bars but unsure of the size of headset and am a little confused regarding the standard 25.4 and the oversized 31.8, what is the main difference and would these go on my current frame??

the other thing i want to change is the forks as they are a little rusty but cant afford to do these just yet. would it be ok to keep the old ones on for a bit and just change at a later date or is it pointless doing the rest up and leaving crap forks, as i say cant afford new forks at the minute

the only thing im looking to get the shop to do is build my wheels but want to do the rest myself to help learn the mechanics of the bike and for some fun aswell lol

    The headset is integrated 1 1/8". Leave the forks if you want. Just get a stem thats 1 1/8", less than about 100mm and has the size bar clamp you want. 31.8 oversized is stronger torsionally (twisting) and therefore a bit better and you have more choice.

    And its a shame you cant build your own wheels. In my own little bike geek way I love the fact that I built mine (or at lest the back one anyway).

    What year Aggressor? Early ones were standard headsets, some are internal (zero stack)

    as for the wheels, not sure id trust myself, how clumsy i am just to say ive built the rest will be an achievement lol

    Sorry to bump the thread but what are the main oils and lubricants i need for when rebuilding new bike

    also would it be worth it to get the forks serviced or not really
