Going to Spain with some friends in the end of March (1st few weeks of Easter hols)-
Probably somewhere on the South East coast-
Is there any decent cycling around there, like any big mountains or anything?

Spain is a very mountainous country so you'll find plenty of challenging cycling.
There is lots of good cycling in the Granada area and it's close enough to the coast if you want to take a day off by the sea.
To give you some ideas:
The Lecrin Valley near Granada is a beautiful area with lots of hills - check out my web site: www.lecrinvalleycycling.talktalk.net - it has maps and photos of routes and downloadable GPS tracks.
If you are near Granada you can do a 2700m ascent up to the peak of Veleta:

The Alpujarras area south of Granada is also good - very mountainous and reasonably quiet roads

Generally the coast is well developed & busy. The mountains often start just inland & are quiet.

Not in March he can't. There's a ski resort 2/3 of the way up for a good reason.

I live in Spain and do a lot of long routes and can repeat that in general its best to avoid the mediterranean coast whenever possible. Its over developed and there is a lot of traffic.
The link below details long distance off-road riding around Andalucia, maybe you can find a site to help with some of the translation or at least the maps will be of use. I haven't done this route yet but its very high on my 'to-do list.
