Winter Riding in Southern Europe

Dear All,
I am planning to escape London for a week or two to do some cycling in Europe, pref Southern France or Spain. Does anyone have a particularly good place to recommend for this time of year, that is well served by air, and has a particularly good b&b, cycle shops, support etc?

If you're looking for a week, you really can't do better than Mallorca. Plenty of flights, bike friendly hotels excellent mountain roads in the Tramuntana in the West or flatter roads in the East both of which have excellent cycling specific sign-posting.
More than a week and I think you could tire of the place.
