If you've never done it before it make take some time so I'd recommend reading up on ParkTool's website (can't remember the link off hand) but shouldn't take more than an hour.

If in doubt get a knowledeable friend or your LBS to lend a hand

I am told that building a shimano brake is a Sunday afternoon job, supposedly very easy according to my LBS.

Building it up is easy. Filling and bleeding takes patience but isn't difficult as long as you know what to do and have the kit.

what said above is my view. filling/bleeding is the harder part but it's easy if you know what your doing.
