I'm a bit of a fatass (18-19 stone) I was wondering if i should switch from a single air canister shock like a fox rp23 to one with a piggyback air shock. like the dhx 5.0 . Would a twin air cannister be better for my weight?

not really. as the piggy back is just for oil and the propeddle.
    how why what and when.
    more info needed.

Not really. The extra canister is to tune the damping and bottom out resistance range rather than be used as a spring. However it is a heavier duty shock.

If you wanted to make a real difference a DHX 5 Coil with the appropriate srping would feel much better at your weight but would add weight to the bike.
