Is there such a thing as lightweight/quality "branded" 7 speed wheels (rear) ? - there's plenty of 8-speed rears etc, but I've not noticed any 7-speed.

You can fit a spacer behind the cassette on an 8speed wheel to use a 7 speed cassette.
I've added a signature to prove it is still possible.

Thanks Red - looks like its a 4.5 mm spacer that's needed.

Just thinking about this again, and after altering my bar height before, I've noticed I've got Shimano STI 8-speed shifters :) - so I 've got a 7-speed bike with 8-speed shifters - bit odd but presumably means I could go straight to an 8-speed wheel - is that the case? - one thing with that though, if I did go straight for an 8-speed wheel & cassette would my front and rear mech need changing or altering?

    Thanks

No. Only adjusting the limit screws on the rear.
